The villa, its guesthouses, vineyards and olive groves have all been lovingly restored by Sting and Trudie, and it is now a vibrant and fully functioning organic farm and vineyard. Now, Trudie and Sting are offering this truly spectacular, completely unique and historically significant location as a place for you to have a once-in-a-lifetime experience, host the most special of occasions, or simply relax and enjoy a truly incredible location.

Our Wine

From the mid-1500s Il Palagio has harvested, fermented and bottled its own wines. Sting and Trudie have gone to great lengths to keep the tradition alive. Using organic farming methods, they have replanted 11 hectares of vineyards since 2000. Resulting in four beautiful reds: Message in a Bottle, Casino delle Vie, Sister Moon and When We Dance.

Our Oil

Olive trees have graced the landscape of Il Palagio for many hundreds of years, and have been sensitively restored to full productivity. The olives are harvested by hand and then cold pressed with Leccino, Frantoio and Moraiolo olives. The resulting extra virgin first pressed oil is exceptional due to the ideal climate and altitude Il Palagio offers. Creating an olive oil that is both low in acidity, but rich in depth, creating a taste that is pure, delicious, and uniquely Il Palagio.

Our Honey

With long, hot summers, a plethora of flora on the estate, and a working apiary and indigenous bee colony, Il Palagio collects a wide variety of remarkable flavoured honeys. Each delicious, and each with their own distinct taste and floral notes due to the unique combination of plants and flowers that speckle the Tuscan countryside. From dark, robust Chestnut, to mild and delicate Acacia, each is truly special, and like nothing you’ll find elsewhere.
